Seasonal Recipe: Warming Roasted Carrot & Sweet Potato Soup

Ingredients:

  • 3 large carrots, chopped
  • 1 medium sweet potato, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 700mls vegetable stock
  • 1 tsp ground ginger
  • ½ tsp turmeric
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Optional: A splash of coconut milk for creaminess

Instructions:

  1. Preheat oven to 400°F (200°C). Toss carrots and sweet potato with olive oil, salt, and pepper. Roast for 25 minutes.
  2. In a pot, sauté onion and garlic until fragrant. Add roasted vegetables, broth, ginger, and turmeric. Simmer for 10 minutes.
  3. Blend until smooth, adjusting seasoning as needed. Stir in coconut milk if desired.
  4. Serve warm and enjoy!
